Each finalist tackled the theme “Global Inspiration,” transforming three surprise proteins into beautiful displays inspired by flavors and traditions worldwide. The finalists had 45 minutes to showcase their skills, with each display demonstrating the quality of Ontario meats while inviting spectators to explore new culinary adventures.
Judges evaluated the finalists on their precision, creativity, and merchandising abilities. Ferrusi’s winning presentation included the boneless chuck roll, whole chicken, and boneless pork loin, provided by Abate Packers, Ontario Beef, and Domingos.
Pantry ingredients were supplied by Malabar Ingredients, allowing each butcher to present their unique storytelling through butchery.
Ferrusi’s victory is a tribute to his 40-year career in butchery, where he started in a family-run business and is now a meat manager at Fortino’s. Proudly representing Fortino’s, Ferrusi said, “Winning this award is an honor and reflects the years of dedication and passion I have for butchery. I am grateful to Meat & Poultry Ontario for organizing such a fantastic competition.”
Franco Naccarato, Executive Director of Meat & Poultry Ontario, expressed his admiration, noting that Ferrusi's skill and creativity showcase the best of Ontario's butchery. “His performance was inspiring, demonstrating mastery and innovation,” said Naccarato.
Alongside the title, Ferrusi received a prize package valued at over $3,000, including a Minimax Big Green Egg Ultimate Kit and additional prizes.
The competition serves as a celebration of Ontario’s butchery tradition, spotlighting the artisans who add quality and creativity to the industry.
